THICK & CHUNKY VEGGIE BBQ SAUCE
This is a great homemade barbeque sauce. It has lots of veggies in it making it almost like a salsa. It very good on chicken.
Ingredients
- 1 Large onion, coarsely chopped
- 2 garlic cloves, coarsely chopped
- ½ Cup carrots, shredded
- ½ green bell pepper, chopped
- 2 Tablespoon canola Oil
- 2 Tablespoon Butter
- ½ teaspoon celery seed
- 1 teaspoon ground cumin
- ½ teaspoon ground chipotle pepper
- 2 teaspoon smoked paprika
- 1 (28 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 (4 oz) can tomato paste
- 1 Tablespoon shredded horseradish
- ¾ Cup dark brown sugar
- ¼ Cup cider vinegar
- 3 Tablespoon prepared mustard
- 1 teaspoon orange zest
- 1 Tablespoon Worcestershire sauce
- 1 Tablespoon fresh chopped parsley
- ½ Cup water
- Salt & pepper to taste
Directions
- Sauté onions, bell pepper and garlic in oil and butter in a stock pot over medium-high heat, stirring constantly, until tender.
- Sprinkle the cumin, chipotle pepper, celery seed and smoked paprika over the vegetables.
- Stir for 1 minute, until fragrant. Add the next ingredients stirring after each addition.
- Bring to a boil; reduce heat to low, and simmer 30 minutes or until thickened, stirring often. (If too thick add a little more water)
- Good for chicken, ribs, and burgers.
