Everyone wants to know what to do with leftover turkey. There are lots of recipes to choose from. One that we like is making a casserole of turkey and dumplings. This recipe is easy and tasty. After tasting this you may not look at the drudgery of leftover turkey again!

Casserole Ingredients

  • 8 cups smoked turkey, sliced
  • 5 cups chicken broth
  • 4 ½ Tablespoons butter, divided
  • 1 medium chopped onion
  • 1 bag frozen mixed vegetables
  • 2 Tablespoons chopped fresh parsley
  • ½ cup half & half
  • 2 ½ Tablespoons flour
  • 1/8 teaspoon poultry seasoning
  • 1 cup sliced mushrooms
  • 1 Tablespoons dry sherry
  • Salt and pepper to taste
  • 1 cup chopped celery

Directions

  1. In a large pot, over medium heat, add 2 tablespoons of the butter, mushrooms and onions.
  2. Sauté about 2 minutes. Set aside.
  3. Add the rest of the butter to the pot.
  4. Stir in the flour until all the butter is absorbed.
  5. Add the chicken broth stirring until smooth.
  6. Then add the mushroom mixture and all the other ingredients to the broth except the turkey.
  7. If too thick add a little water.

Dumpling Ingredients

  • 8 cups smoked turkey, sliced
  • 1 small box biscuit mix
  • 1 teaspoon chopped parsley
  • Pinch of seasoned salt
  • Pinch of poultry seasoning

Dumpling Directions

  • In a bowl add the season salt, poultry seasoning, and parsley to the biscuit mix.
  • Complete the mix as directed on the box.
  • Drop the biscuits by the spoonful into the simmering broth pot.
  • Space the biscuits evenly.
  • Cover the pot tightly and reduce the heat to medium low.
  • Steam the dumplings about 9 to 11 minutes.
  • Remove the cover and stir the mixture once.
  • Remove the dumplings and place in a shallow bowl.
  • Cover the dumplings with smoked turkey slices.
  • Then spoon the vegetable /broth mixture over the turkey.
