Bacon Potato Salad
A nice way to kick a traditional dish up a few notches. Add some bacon (one of my favorite foods) It’s been modified a little but credit for this recipe goes to the Miliary recipes site.
Ingredients
- 6-8 medium potatoes about 3 lbs peeled and cut into 1 cubes
- 1/2 lb bacon cooked and crumbled
- 6 green onions chopped
- 2 celery ribs finely chopped
- 2 tbsp diced pimentos drained
- 3/4 tsp salt
- 1/4 tsp pepper
- 1/2 cup mayonnaise
- 1/2 cup sour cream
Directions
- Boil potatoes in pot for 15-18 min or until tender drain and let cool slightly.
- Place potatoes in a large bowl.
- Add bacon, chopped green onions, and next 4 ingredients.
- Stir together mayo and sour cream until blended.
- Pour over the potato mixture, tossing gently to coat.
- Cover and chill at least 1 hr.
