Bacon Potato Salad

Bacon Potato Salad


A nice way to kick a traditional dish up a few notches. Add some bacon (one of my favorite foods) It’s been modified a little but credit for this recipe goes to the Miliary recipes site.

Ingredients

  • 6-8 medium potatoes about 3 lbs peeled and cut into 1” cubes
  • 1/2 lb bacon cooked and crumbled
  • 6 green onions chopped
  • 2 celery ribs finely chopped
  • 2 tbsp diced pimentos drained
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream

Directions

  1. Boil potatoes in pot for 15-18 min or until tender drain and let cool slightly.
  2. Place potatoes in a large bowl.
  3. Add bacon, chopped green onions, and next 4 ingredients.
  4. Stir together mayo and sour cream until blended.
  5. Pour over the potato mixture, tossing gently to coat.
  6. Cover and chill at least 1 hr.
