Tex-Mex Salad
Tangy and tasty salad with lots of crunch.
Ingredients
Salad
- 1 cup Grape or cherry tomatoes, cut in half
- 1 small red onion, thinly sliced
- 1 each Yellow, green, red bell pepper, diced
- 2 stalks of celery, diced
- 1 ½ teaspoon diced Jalapeño pepper
- ¼ cup finely chopped cilantro
- 15 oz can Black beans, drained and rinsed
- 1 teaspoon chopped parsley
Dressing
- 1 clove garlic, finely chopped
- ¼ cup olive oil
- 1teaspoon brown sugar
- ½ teaspoon cumin
- 1 tablespoon lime juice
- 1 tablespoon lemon juice
- Pinch of salt
Directions
- Wisk all the dressing ingredients together.
- Toss the ingredients in a large bowl with salad dressing.
- Cover and chill until ready to serve.
