Chipotle Potato Salad


The chipotle potato salad recipe adds the flavor of chipotle chilies. It’s a very tasty and spicy salad but not hot.

Chipotle chilies are ripe jalapeno peppers that have been dried and smoked and are used mostly for cooking. Chipotles are prominently marketed packed in Adobo sauce.

Adobo is a dark, piquant Mexican sauce that’s a mixture of chipotle chilies, vinegar, and herbs. Be aware that chipotle flavor can overpowering so use carefully.

Ingredients

  • 1 stalk celery, diced
  • 4 cups cubed Red Bliss Potatoes (boiled & drained)
  • 2 tablespoons onion, diced
  • 1 chopped green onion (white & green parts)
  • 3/4 cup mayonnaise
  • 1 tablespoon cider vinegar
  • 3 teaspoons sugar
  • 1/2 teaspoon celery seed
  • 1 teaspoon chipotle chilies (in Adobo sauce), finely diced
  • 1/4 cup chopped parsley
  • Season salt to taste
  • Adobo sauce to taste

Directions

  1. Mix together chipotle chilies, mayonnaise, sugar, celery seed, cider vinegar, season salt and Adobo sauce.
  2. If the mixture is too thick add 1 teaspoon more cider vinegar.
  3. Blend together with the onion and potatoes.
  4. Refrigerate at least an hour.
  5. Serve
