The FoodSaver V3440 Vacuum Sealing System with SmartSeal Technology is a great tool for the smoked meat barbeque chef because you can cut marinating time by using a vacuum sealing.

Every barbeque chef knows that you need to marinate your ribs, brisket, or shoulder prior to putting in the smoker. The marinating tools vary as much as the cook.

Most people use some type of plastic sealable container or they just wrap the meat in plastic wrap. This is always followed by some period of marination in the refrigerator. The amount of time depends on what is being marinated. For ribs, brisket, or shoulder the ideal marinating time is overnight but many use shorter times.

Well… the FoodSaver V3440 Vacuum Sealing System tool cuts the marination time in half. You don’t need to let it sit overnight to get the full impact of the marinade when using this system.

The process of vacuum sealing causes the marinade to infuse into the pores of the meat at a much faster rate than simply putting the food in plastic wrap or a plastic container. This method works extremely well for traditional barbeque meats and for other marinade food items such as chicken and fish.

In fact it works so well that my experience is that you have to throttle back on the amount of marinade. You can use smaller amounts.

Keep in mind that the FoodSaver system has several sizes in the plastic bags and it also has hard plastic containers that can also be vacuum sealed. It is a great tool to add to the smoked barbeque “kit bag” and it also great for marinating regular barbeque grilling items like steaks and chops.
