Tex-Mex Salad

Tex-Mex Salad


Tangy and tasty salad with lots of crunch.

Ingredients

Salad

  • 1 cup Grape or cherry tomatoes, cut in half
  • 1 small red onion, thinly sliced
  • 1 each Yellow, green, red bell pepper, diced
  • 2 stalks of celery, diced
  • 1 ½ teaspoon diced Jalapeño pepper
  • ¼ cup finely chopped cilantro
  • 15 oz can Black beans, drained and rinsed
  • 1 teaspoon chopped parsley

Dressing

  • 1 clove garlic, finely chopped
  • ¼ cup olive oil
  • 1teaspoon brown sugar
  • ½ teaspoon cumin
  • 1 tablespoon lime juice
  • 1 tablespoon lemon juice
  • Pinch of salt

  • Directions

  1. Wisk all the dressing ingredients together.
  2. Toss the ingredients in a large bowl with salad dressing.
  3. Cover and chill until ready to serve.
