Old Standby Vinegar Barbeque Sauce


Vinegar barbeque sauce is a regional favorite of the Carolinas. These barbeque sauces have vinegar as a common ingredient.

Western North Carolina distinguishes it’s entry by adding ketchup which gives it a sweeter flavor. Eastern North Carolina aficionados will ditch the ketchup for a more vinegary bite in their Q.

As you go south of the Carolinas the locals add mustard to their sauce which makes it even more unique. I like them all.

This sauce is a general type of vinegar based sauce and works well with smoked pork barbeque. Pour it over your pulled or chopped “Q” and heat or keep it as a “sauce on the side” condiment that lets your guest add just the right amount to their ribs or pulled pork.

Ingredients

  • 2 cups of cider vinegar
  • 1 cup of ketchup
  • 1/4 brown sugar
  • 3 teaspoons salt
  • 1/2 teaspoon cayenne
  • 1 teaspoon ground black pepper
  • 1 teaspoon white pepper

Directions

  1. Combine everything in a sauce pan and heat gently for about 5 minutes.
  2. Let cool and store in a glass container
  3. Sauce will keep about a month under refrigeration
