Smoked Salmon Brine


This is a simple smoked salmon brine that any smoker cook can use to make delicious smoked salmon.

Ingredients

  • You will need a 1 gallon plastic container
  • 1 gallon of water
  • 2 cups of kosher salt
  • 1 cup of brown sugar
  • 1/3 cup of lemon juice
  • 1 tablespoon of garlic powder
  • 1 tablespoon of onion powder

Directions

  1. Mix all the ingredients until dissolved.
  2. Place the fish pieces in the plastic container and make sure they are completely submerged.
  3. Fish doesn’t take that long to brine, usually no more than two hours, assuming 1-2 pound fish pieces.
  4. Use less time if the pieces are smaller.
