Smoked Salmon Hash for Breakfast


Even the best barbequers have occasional leftovers. Smoked Salmon Hash is the ideal leftover creation. Its hard to believe that you can have leftover smoked salmon, but it does happen sometimes.

My family HATES the thought of leftovers. So I disguise the food into something new. This is a great breakfast dish.

Ingredients

  • 2 Cups of leftover Smoked Salmon, broken into bite-sized pieces
  • 2 Cups of diced parboiled potatoes
  • 1/4 Cup of diced onion
  • 2 Tablespoons diced sweet red bell pepper
  • 1 tablespoons butter
  • 1 tablespoon Oil (your choice)
  • Add salt and pepper to taste

Directions

  1. In a skillet sauté the peppers & onions in the oil with butter until caramelized.
  2. Brown the potatoes, then add the salmon.
  3. Add the potatoes
  4. Heat until the salmon is warmed through
  5. Serve
