Smoked Turkey Quesadillas
This is a good recipe on the same turkey theme. It just goes to show how versatile turkey really is…
Ingredients
- 2 cups leftover turkey, pulled apart
- ½ cup diced onions
- 4 tortillas
- 2 cups grated sharp cheddar or jack cheese
- 1 tablespoon jalapeño, sliced
- 1 cup sour cream
- Shredded lettuce
- 1 sliced avocado
- 1 jar prepared salsa
- 4 slices cooked bacon crumbled
- ½ cup sliced olives
- sprigs of fresh Cilantro for garnish
Makes two (2) tortillas
Directions
- Place 1 tortilla in a large skillet.
- Add a layer ( in this order)of ¼ cup of cheese, 1 cup smoked turkey, ¼ cup onion, some shredded lettuce, ½ the crumbled bacon, ½ of sliced avocado, 1 tablespoon salsa, ½ Tablespoon jalapeño and another ¼ cup of cheese
- Top this off with 2nd tortilla
- Cook over medium heat for 1 ½ minutes; then carefully turn the quesadilla over and cook on the other side for another 1 ½ minute
- Cut quesadilla into 4 equal parts and top with a dollop of sour cream and sliced olives
- Garnish with cilantro
