Turkey and Dumplings
Everyone wants to know what to do with leftover turkey. There are lots of recipes to choose from. One that we like is making a casserole of turkey and dumplings. This recipe is easy and tasty. After tasting this you may not look at the drudgery of leftover turkey again!
Casserole Ingredients
- 8 cups smoked turkey, sliced
- 5 cups chicken broth
- 4 ½ Tablespoons butter, divided
- 1 medium chopped onion
- 1 bag frozen mixed vegetables
- 2 Tablespoons chopped fresh parsley
- ½ cup half & half
- 2 ½ Tablespoons flour
- 1/8 teaspoon poultry seasoning
- 1 cup sliced mushrooms
- 1 Tablespoons dry sherry
- Salt and pepper to taste
- 1 cup chopped celery
Directions
- In a large pot, over medium heat, add 2 tablespoons of the butter, mushrooms and onions.
- Sauté about 2 minutes. Set aside.
- Add the rest of the butter to the pot.
- Stir in the flour until all the butter is absorbed.
- Add the chicken broth stirring until smooth.
- Then add the mushroom mixture and all the other ingredients to the broth except the turkey.
- If too thick add a little water.
Dumpling Ingredients
- 8 cups smoked turkey, sliced
- 1 small box biscuit mix
- 1 teaspoon chopped parsley
- Pinch of seasoned salt
- Pinch of poultry seasoning
